Chocolate crunchie ice-cream cake

Chocolate and vanilla ice-cream, chocolate biscuits and confectionary pieces come together in this easy party cake.

Ingredients

  • 27 Oreo Classic Cookies
  • 3 cups chocolate ice-cream, softened
  • 3 cups vanilla ice-cream, softened
  • 110 g Cadbury Crunchie Sprinkles (or substitute other confectionery pieces)
  • Candles and decoration, as desired
Freezing time: 2-3 hours.

Instructions

  1. Line a 20 cm cake pan or springform pan with baking paper (ensure the lining comes 5 cm above the top of the tin).
  2. Arrange Oreos over the base and around the bottom edge of the pan. Spread the chocolate ice cream over the base and sprinkle with one sachet of the Crunchie Sprinkles. Freeze until firm.
  3. Spread the vanilla ice cream over the choc base then top with the remaining sprinkles. Freeze until firm. Decorate as desired.

Cook's Notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
